• 4 medium red beets
  • 2 tbsp olive oil
  • 1 tbsp peeled & minced fresh ginger
  • 2 tbsp minced serrano peppers
  • 1 tbsp peanut oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp finely chopped cilantro
  • 1-1/2 tsp red wine vinegar
  • 1 tsp lime juice
  • 1/4 tsp cayenne pepper
  1. Preheat oven to 400 degrees F.  Put beets in a roasting pan & cover with the olive oil, salt, and a splash of water.  Cover tightly with foil and cook for 30-60 minutes, when tender all the way through.
  2. Cool, peel, and dice.
  3. Combine beets with all other ingredients.
