- 4 medium red beets
- 2 tbsp olive oil
- 1 tbsp peeled & minced fresh ginger
- 2 tbsp minced serrano peppers
- 1 tbsp peanut oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp finely chopped cilantro
- 1-1/2 tsp red wine vinegar
- 1 tsp lime juice
- 1/4 tsp cayenne pepper
- Preheat oven to 400 degrees F. Put beets in a roasting pan &
cover with the olive oil, salt, and a splash of water. Cover tightly
with foil and cook for 30-60 minutes, when tender all the way through.
- Cool, peel, and dice.
- Combine beets with all other ingredients.
